Coq Au Vin
     A multitude of flavors converse in this classic French dish. The flavor of the juicy breast of chicken is enhanced by the sauce made with wine, tomatoes, fresh mushrooms, chicken stock, and fresh herbs.

Wild Pacific Salmon
     Enjoy the flavor of the Pacific North West when you taste our Grilled Salmon with Lemon Butter, or a traditional Italian Breaded Salmon. Seafood Lovers will really enjoy either of these options.

Chicken Marsala
     Large boneless skinless breast of chicken, sauteed and finished with a savory wine, mushroom and prosciutto sauce.

Pesto Grilled Chicken
     Boneless breast of chicken, marinated with a fresh basil pesto and grilled to perfection.

Chicken Piccata
     Large boneless skinless breast of chicken; Sauteed with olive oil, lemon juice, white wine, butter, and capers. A light but satisfying for any palate; our best seller!

Roast Beef Au Jus
     This popular item is seasoned, slow roasted and thinly sliced, to ensure juicy tenderness. An American favorite.

Palomillo Steak
     A hearty cut of beef, marinated with garlic and fresh lime juice, carved to order by the Chef at the carving station. Grilled to medium / medium rare unless otherwise specified.

Prime Rib
     Slow roasted to perfection to allow the robust taste of beef to mingle with the seasoning of fresh garlic and assorted herbs, served with our classic Au Jus,
recommended for a carving station.

Marinated Tender Loin of Beef
     Whether carved or served as a filet, this elite cut of beef melts in your mouth, marinated overnight in Mark's "special" marinade for his signature taste, served with horseradish sauce and herbed mayonnaise

Shrimp Saute'
     Our jumbo shrimp, sauteed with butter, white wine, fresh squeezed lemon juice, and fresh herbs, served over al dente' pasta. The delicate flavors are sure to please the most discriminating palate.

Macadamia Nut Crusted Grouper
     A special treat from the Caribbean waters, coated with sweet macadamia nuts and served with Mark's own lime ginger sauce.

Caribbean Jerk Pork
     Your palate will come alive with this tasty treat using center cut Pork Loin for banquets, or tenderloin for appetizers. This heavily marinated cut will surely please. Let the fruit juices and the island spices take you through the Caribbean.

By carefully listening to our customers, we are able to provide exactly what they are looking for. Their wishes may be traditional items and services, or may go beyond, with ethnic foods, presentations, and cultural / regional themes.
